Fruity Pebbles Ice Cream Sandwich

I can’t believe summer has come to an end.  We’re still enjoying some of the good weather and the outdoors before we see really cold and rainy days here in the northwest.  Summer may be over, but you can certainly enjoy ice cream year round!   We recently made these yummy Fruity Pebbles Ice Cream Sandwiches. Everyone in our family loved them, but they were especially fun for the kids (both to eat and make).

If you’d like to make these fun treats too, next time you stop by Target pick up a box of Post Fruity Pebbles and any of the following ingredients:

Fruity Pebbles Ice Cream Sandwiches:

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 10 TBSP butter (room temperature)
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup Post Fruity Pebbles cereal (1/2 cup for cookie & 1/2 cup for sandwich assembly)
  • 1 carton vanilla ice cream (1/2 gallon)


First you need to make the cookies, in a mixer add butter and sugar and whip for about a minute.  Add eggs and vanilla and continue to mix until combined.  In separate bowl combine the dry ingredients, flour, baking powder, and salt.  Then gradually add the dry ingredients to the batter.  Mix until everything is well combined.  Stir in 1/2 cup of Post Fruity Pebbles by hand.

With a small cookie scoop, scoop dough and arrange on a non stick baking sheet.  With the bottom of a cup or glass flatten the dough so the cookies are about 1/2 inch thick.   Bake at 375 degrees for 10 minutes or until golden brown around the edges of the cookie.

Take cookies out of the oven and transfer to a cooling rack.  After cookies have completely cooled, you are ready to assemble.  In small bowl add 1/2 cup of fruity pebbles and set aside.

Add one scoop of ice cream to the bottom of one cookie, then add another cookie on top of the ice cream and gently press down.  Then simply dip or roll the center of the ice cream cookie sandwich into the bowl of Fruity Pebbles.  Make sure you roll the entire cookie, so the entire ice cream cookie is coated with the fun Fruity Pebbles.  Place ice cream sandwiches into freezer for 30 minutes so they can firm up slightly.  Enjoy!
