The MorningStar Farms Bacon Strips are 100% vegetarian. They are cholesterol free and only 60 calories per strip. I love the fact that they aren’t greasy.
Breakfast Cups: (makes 6 breakfast cups)
- 12 strips of MorningStar Farms Veggie Breakfast Bacon Strips
- 6 eggs
- 1/3 cup cheese
- 2 slices of bread
- salt and pepper
- fresh chives for garnish
Preheat oven to 400 degrees. Spray non-stick cooking spray in muffin pan. Use a circle cutter (or the rim of a cup) to cut out six circles from the slices of bread and add them to bottom of the muffin pan. Add two strips of the veggie bacon around the edges of each muffin cup making a bacon wall all the way around the muffin opening. Next, sprinkle on some cheese and crack an egg and add to each one of the muffin cups.
Season with salt and pepper. Bake for 15 minutes. I like my eggs a little runny, but if you want a more solid egg yolk then cook them a bit longer. Add chopped chives and enjoy!!!
These breakfast cups come together nicely, the bacon strips are flexible right out of the freezer so they mold to the muffin cups easily. When cooked in the oven, they come out with a nice crisp edge at the top and everything holds together really well.
