Fruit Topped Pizzelle
Shell:
- 1 cup flour
- 1/2 cup sugar
- 6 Tbsp melted butter
- 1 tsp baking powder
- 1/3 cup milk
- 1 tsp vanilla
- 2 eggs
- 1/4 tsp salt
Filling:
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1/3 heavy whipping cream
- 1 tsp vanilla
- 1/2 cup mini chocolate chips
- pastry bag
Start by making batter for shells, whisk flour, sugar, salt and baking powder together. Add melted butter, eggs, milk, and vanilla Scoop a heaping tablespoon of batter into pizzelle maker and cook util golden brown. Set on wire rack to cool.
With mixer blend ricotta cheese, powder sugar, and vanilla. Set aside. In another mixing bowl, beat whipping cream until stiff peaks form, Fold whipping cream and chocolate chips into batter. Add to pastry bag and chill for 1 hour.
