I love a good cookbook! I love thumbing through and seeing all the great pictures and imagining all the wonderful dishes I can create for my family. I love the fact that Ryan Scott’s new One to Five cookbook is one that helps me get dinner on the table with shortcut solutions for pizza night to breakfast as dinner. Who doesn’t love breakfast for dinner?
I love the clever twist on this cookbook, it takes one ingredient (which you may already have on hand) and gives you five different ways to prepare it. Here are just a few of the ingredients One to Five features:

This cookbook helps you transform supermarket staples into more than 100 affordable and crowd-pleasing dishes you can prepare in less than an hour. I appreciate recipes that can be made quick, the hours just before dinner are always the busiest at my house. I’m sure it’s the same at your house too!
I used the recipes for Very Berry Warm Muesli for breakfast this week. This recipe called for Brown Rice, I never would have thought of brown rice as a possibility for a breakfast option, but it totally works!
This recipe makes a fast and easy breakfast, from start to finish it probably took me about 10 minute. I love that is gives me a warm breakfast option, especially on these cool fall days.
This breakfast is packed with wholesome grains, nuts, fresh fruit and dairy with a bit of sweetness. It’s similar to a parfait but loaded with more nutrition to start your day off right.
